This Raw Walnut Fudge is loaded with healthy fats from coconut oil, which is rich in antioxidants and has been shown to improve the ratio of good cholesterol to bad cholesterol. Remember, while coconut oil is a healthier fat, it's not low-calorie, so enjoy this treat in moderation.
Ingredients:
- 1 cup walnuts soaked for 2-4 hours, strained
- 1/3 cup raw cacao powder
- 1/2 cup melted coconut oil
- 1/3 cup maple syrup
- 2-3 Tbsp. raw cacao nibs
- 1/2 tsp. Real Salt Coarse
Directions:
- Blend all ingredients, except the raw cacao nibs and Real Salt, in a food processor.
- Line a small pan with parchment paper and spread out mixture, pressing into the pan.
- Sprinkle with cacao nibs and Real Salt pressing lightly into the surface.
- Chill in freezer for at least one hour.
- Cut into pieces and serve.
