Salmon with Avocado

If you’re craving a tasty twist on salmon, look no further than this Lemon Pepper Salmon with Avocado Pico de Gallo from our partner Lindsey Hargett. The combination of tender salmon filets, zesty lemon pepper, and fresh avocado pico de gallo makes for a simple, tasty, and healthy main course that we think you’ll come back to again and again.

Ingredients

  • 2 6 oz. salmon filets
  • 2-3 Tbsp. Real Salt Lemon Pepper
  • 2 Tbsp. olive or avocado oil
  • 1 avocado, diced
  • 1/2 cup red onion, finely diced
  • 2 Roma tomatoes, diced
  • ½ bunch finely chopped cilantro
  • Juice from 2 limes
  • Real Salt, to taste

Instructions

  1. Pat the salmon filets dry with a paper towel, then set aside on a plate. Preheat the oven to 450 ℉.
  2. Sprinkle a generous amount of Real Salt Lemon Pepper onto each salmon filet. Add the oil to a stainless steel or cast iron pan, then heat over medium heat.
  3. Once the pan is hot, place the salmon seasoned side down on the pan. Leave it for a couple of minutes so that you get a good sear. If your salmon has skin, then you’ll only need to sear one side. If it doesn’t, season and sear both sides. Don’t cook all the way through.
  4. Place the salmon in a small baking dish and put it in the oven. Bake until the salmon is cooked through (light pink and flaky, or 130 ℉ using a thermometer).
  5. While the salmon is cooking, combine the avocado, red onion, Roma tomato, cilantro, and lime juice in a bowl and mix well. Add Real Salt to taste.
  6. Once the salmon is finished cooking, top with the avocado pico de gallo. Serve immediately. It's delicious over mixed greens, rice, or quinoa.
