Whether you're going on a 250-mile run like Ben or simply looking for a delicious, healthy meal, these tacos promise to energize and satisfy.
Ingredients:
- 1 lb. ground beef (try Redmond Heritage Farms Real Beef Ground Beef if you live in Utah)
- 1 onion, chopped
- 1 ½ Tbsp. Redmond Real Salt Taco Seasoning
- ¼ cup avocado mayo
- ¼ cup unsweetened ketchup
- Cheese, shredded
- Cilantro, chopped
- Salsa
- Corn tortillas (for low-carb, Ben makes fried cheddar cheese shells)
- Guacamole
Instructions:
- In a frying pan, sauté the chopped onion until soft.
- Add the ground beef to the pan and cook until browned, breaking it into small pieces with a spatula.
- Once the beef is fully cooked, stir in the taco seasoning, avocado mayo, and ketchup. Mix well, heat through, and set aside.
- For the tortillas, heat olive oil in another frying pan over medium-low heat. Fry each tortilla for about a minute on each side or until heated through.
- Assemble the tacos by placing the taco meat on the tortillas, then top with cheese, cilantro, salsa, and guacamole.
- For a low-carb alternative, consider frying cheddar cheese until crispy and using it as the taco shell instead of corn tortillas.
