Customer Experience Associate Perla Ruiz shared this Piña Colada Fruit Salad at a recent Campfire Chat, an event where the Redmond Life team gathers around a campfire for good food, friends, and conversation. It was such a big hit, we thought you’d like to try it too!
Ingredients:
- 1 pineapple
- 1 cup of pitted cherries
- 2 cups of unsweetened coconut flakes
- 1 scoop of Piña Colada Re-Lyte
- 1 can (13.5 oz.) of coconut milk
- 8 oz. of creme fraiche
Instructions:
- Dice the pineapple and pitted cherries and put them in a bowl.
- Add 2 cups of unsweetened coconut flakes.
- Put the coconut milk, creme fraiche, and Piña Colada Re-Lyte into a separate bowl and blend them together.
- Add the coconut milk mixture to the pineapple, cherries, and coconut, and mix well.
