Cottage Cheese Egg Bites
Meet your new favorite grab-and-go breakfast. These fluffy, protein-packed bites are filled with savory sausage and melted cheese, making them a quick and satisfying option for busy mornings or anytime you need a hearty snack.
Ingredients:

8 Redmond Heritage Farms Real Eggs

1 1/4 cups cottage cheese

3/4 cup shredded cheddar, pepper jack, or mozzarella cheese

3/4 cup cooked Redmond Heritage Farms Country Sausage, excess fat drained

3/4 cup chopped green onions
-
2 1/2 tsp. Redmond Real Salt Organic Season Salt

1/4 tsp. cracked black pepper
Instructions:

Preheat the oven to 325°F. Place a baking dish filled with water on the bottom rack to create steam, which will create a more custardy egg bite.

Lightly grease muffin tins with butter.

In a blender, combine eggs, cottage cheese, season salt, and pepper, and blend until smooth.

Add about 2 Tbsp. of cooked sausage, shredded cheese, and green onions to each muffin cup.

Fill each muffin cup to the top with the egg mixture.

Bake for 20–25 minutes, until eggs are set and lightly golden.
