Oven-Roasted Shrimp Scampi

Tender shrimp baked in a rich, garlicky butter sauce, brightened with at touch of lemon, and topped with a sprinkle of Parmesan, make this dish deliciously decadent. Enjoy with crusty bread, your favorite pasta, or steamed rice to soak up every last drop of flavor. Whether it’s a dinner for two or an appetizer for four, this dish is easy to make and impossible to resist. 

Ingredients:

  • 1 lb. medium raw shrimp, shelled, deveined, tails attached

  • 6 oz. butter (1 1/2 stick)

  • 6 cloves garlic, finely chopped

  • 1 tsp. Redmond Real Salt Organic Onion Salt

  • Pinch of red pepper flakes

  • 1 lemon, juiced (or 1/4 cup dry white wine)

  • 1/4 cup Parmesan cheese, grated

  • Handful of parsley, chopped

Instructions:

  1. Preheat oven to 425°F.

  2. Melt butter in a cast-iron skillet over medium heat.

  3. Add chopped garlic, shrimp, red pepper flakes, lemon juice, and Real Salt Onion Salt to the melted butter. Toss gently with a spoon to coat the shrimp.

  4. Sprinkle Parmesan cheese evenly over the shrimp.

  5. Transfer the skillet to the oven and bake for 10-12 minutes or until the shrimp are pink and opaque.

  6. Remove from the oven and sprinkle with chopped parsley.

  7. Serve with chunks of crusty bread to soak up the lemony garlic butter or pair with cooked pasta or steamed rice.
